LanguageHat provides a quote of an interesting story of the history of the name of the Chateaubriand steak, a cut so thick that to attempt to cook it on its own would result in the sides burning while the center was still raw. In order to prevent this, it would be cooked between two other smaller steaks, which could be tossed if they burned in the process.

Chateaubriand published his most famous work under the name of Le Génie du Christianisme. The profane wits of the kitchen thought that a good steak sent to the fire between two malefactor steaks was a fair parody of the Génie du Christianisme.
